Sons of men refers to “human beings.” New Jerusalem Bible has “all the human race.”

Notice that the psalm begins here with all humanity, then narrows down to Israel, then to the priests (compare Psa 115.9-10; 118.2-3), then to the Levites, then to the faithful, and finally to the three young men.
